Avocado Coleslaw
Ingredients:
16 oz. shredded cabbage - mix between green and red cabbage to get a good color
2-4 avocados
Optional: Add in other shredded vegetables - zucchini, squash, bell peppers, jalapeños or poblanos (for a more spicy slaw), brussel sprouts, etc.
½ cup non-dairy Greek yogurt or sour cream (Kite Hill,
Juice of 2 limes, about 3-4 tbsp
Salt and pepper to taste
Directions:
Shred the cabbage and other vegetables into a big bowl.
Mash avocados with the sour cream/yogurt with the salt.
Add the mash into the bowl with the cabbage, add the lime juice and mix thoroughly.
If not serving immediately, place a piece of Saran Wrap on top of the coleslaw so air cannot get to the avocado. This will help the avocado from turning brown. Place in the fridge.
