Summer Squash & Pepper Salad

Ingredients:

  • 4 bell peppers,diced

  • 1-2 zucchini, diced

  • 1-2 yellow squash, diced

  • Fresh Basil

  • 1-2 Avocados, diced

Dressing Ingredients:

  • ¼ cup olive or avocado oil

  • 2 tbsp Apple cider vinegar or vinegar

  • 1 tsp salt

  • 1 clove fresh pressed garlic

Directions:

  1. Cut bell peppers, zucchini, squash and basil into cubes and put into a bowl. 

  2. Mix the dressing ingredients in another bowl and set aside. (I double this recipe depending on how many vegetables I have!) 

  3. Add the dressing to the vegetable bowl and mix well. 

  4. Add the avocado to the top when serving.
