Summer Squash & Pepper Salad
Ingredients:
4 bell peppers,diced
1-2 zucchini, diced
1-2 yellow squash, diced
Fresh Basil
1-2 Avocados, diced
Dressing Ingredients:
¼ cup olive or avocado oil
2 tbsp Apple cider vinegar or vinegar
1 tsp salt
1 clove fresh pressed garlic
Directions:
Cut bell peppers, zucchini, squash and basil into cubes and put into a bowl.
Mix the dressing ingredients in another bowl and set aside. (I double this recipe depending on how many vegetables I have!)
Add the dressing to the vegetable bowl and mix well.
Add the avocado to the top when serving.
